Creamy One-Pan Tuscan Chicken Thighs
Need a hassle-free weeknight meal sure to excite the whole family? This creamy one-pan Tuscan chicken thighs is just that! Seasoned chicken thighs are pan seared, then onions, garlic, and sundried tomatoes are sautéed and combined with spinach, cream, and parmesan cheese.
Ingredients
1 1/2 – 2 lbs. Boneless, skinless chicken thighs
2 tsp Kosher salt
Fresh cracked black pepper
3 tbsp Olive oil, divided
1 medium Yellow onion, finely diced
3-4 cloves Fresh garlic, minced
5 oz. Oil packed sun-dried tomatoes, drained and julienned
4 oz. Fresh baby spinach
2 oz. Parmesan cheese, grated
1 tbsp Tuscan Garden Blend
1 1/4 cup Heavy cream
Instruction

Pat chicken thighs dry and season both sides with salt and pepper.

Heat 2 tablespoons of olive oil in a large sauté pan over medium-high heat, sear chicken thighs for 3-4 minutes per side until golden brown. Remove from the pan and set aside.
- Reduce heat to medium and add the remaining olive oil to the pan along with the diced onion. Sauté for 2-3 minutes until the onion begins to soften. Add in garlic and sauté for another 1-2 minutes.
- Mix in the sun-dried tomatoes and fresh spinach, cook down over medium heat until the spinach is just wilted.
- Add in the heavy cream, Tuscan Garden seasoning, and parmesan cheese. Bring to a simmer, stirring often, and cook for 3-4 minutes until the sauce begins to thicken. Add the chicken thighs back into the pan and allow everything to cook over medium-low heat until the chicken is cooked through, 5-6 minutes.
- Serve over mashed potatoes or pasta and enjoy!
